Wheat is one the important cereals. This plant has two species: wild and domesticated. Wheat is an annual monocot plant and from Graminaceae Family and poales order.
Wheats has two general types in terms of their cultivations kind: spring wheat and autumn wheat. This two in addition to difference between the color, tissue, shape and etc. of their seed, are different in conditions needed for their growth and development. They are being planted in separated times of the year. Seed of the wheat has a groove in seed’s length. Depth of this groove is more in autumn wheats than spring ones. The groove’s parties are globular in spring wheats and angular in autumn wheats.
Although the compounds are different in different kinds of wheat, but on average it is composed of:

- Cellulose: 2.53 %
- Starch and Dextrin: 66.77 %
- Sugar: 1.45 %
- Aromatic substance: 1.85 %
- Gluten: 12.58 %
- Fat: 1.75 %
Also it has enough nutrient and different kind of vitamins and it is a perfect food for human. In addition to nutrition, wheat also have remedial effects.
Unlike other cereals, wheat can be used in different ways such as: bread, Biscuit, cookie, cake, pasta and etc. wheat can be used in paper industry, glue making and also in washing powder making. It’s bran and straw use for feeding animals. For example soft spring or autumn wheats can be used for making biscuit, cookies and cakes and rough spring or autumn wheats is being used more in bakeries.
